Towards the end of December, we collect our recipe books, clean our houses and prepare for the New Year.In the Pan Del Barrio, we start the year of baking for Dia de Reyes, or Epiphany, which traditionally takes place on April 1st January 6 is celebrated across Mexico and Latin America Thanks to the support of our community, we were able to buy our own brand new oven which we hope will give something back for years to come by baking for special occasions
For the upcoming celebration, we are creating our Rosca de Reyes, also known as king bread, with an organic blend of hard red winter wheat, local spring water, sugar, olive oil, salt, cinnamon-oat milk and orange peel and our 2-year-old Sourdough Our plant-based recipe does not use eggs, butter or whole milk, which are used in many bakers’ traditional recipes. We will top our bread with cashew butter sugar and dried fruits such as apricot, fig, cherries and orange peel
We start by making our Rosca de Reyes batter, much like we make the batter for our concha buns, another seasonal favorite.The batter for these is similar to a sweet brioche, but with notes of cinnamon and orange peel-enriched batter like these have been a favorite of mine for years There are many ways to make this batter We will mix ours by hand
Like any other recipe, we feed our sourdough first, then we dip the sugar, orange peel, and cinnamon in cinnamon oat milk, in which case we prepare our cashew butter sugar, clean our surfaces, and start to put our main batter on it, hand-mixing on days like that can something overwhelming, but when the sourdough becomes one with the warm milk and flour, I remember the past year and hope for the coming year. With every fold of the dough, I think about how our friends, family and customers share these traditions with ours Keeping Bread Alive My goal in all of this is to make every bite a wonderful memory for everyone. Once the dough is done, it rests for six to ten hours before it is shaped, as does this baker
After resting, the size of the dough has doubled and we’re going to shape it into its round shape so that it looks like a giant bagel before we add its colorful toppings.We are also going to hide a tiny figure of the baby Jesus in the dough, depicting Mary’s flight to birth where she would not be found by the oppressive Lord Herod Finally, we place strips of cashew sugar and dried fruit on the dough so that it resembles a royal crown.The toppings are strategically placed so that anyone who receives a piece is placed , a bit of dry fruit and sugar gets. After another three to six hours of evidence, we bake our bread so that the festivities can begin
The finished bread is too beautiful to cut, but the hungry anticipation and figuring out who will find the Baby Jesus in their slice – which means they have to make tamales for Dia de la Candelaria in February 2 – leaves our many, up to 18 hours of work disappear in a few moments When the bread is gone, new memories are made and shared by everyone at the table. Creating these moments is the reason why I bake

In 2021, we will also reopen our second store, The Bakers Collaborative, with co-owner / pastry chef Samantha Bird.As part of this project, we will be delivering a variety of breads and pastries such as croissants, bagels and baguettes to San Diego, which can be delivered or picked up in North Park and Barrio Logan
